Right but what happens if I don't have the star?

If my fake said that my ID was issued January 6, 2019 and all IDs produced after 2016 should have the star, bartenders could figure out its fake.

Check your states laws against this, but here's how it works in many states:

Once a "Real ID" option becomes available through Sec. of State, people are allowed to apply for a new Real ID by bringing the acceptable Docs (SSN n' Birth cert) or do that when you need to renew.

What I think your getting lost in is that in many states you are not required by law to get a Real ID. If you are trying to do something that requires a Real ID, you need one or another Document that the act allows (Passport is the most common one).

Let's talk about New Mexico specifically. You are half right, they in 2016, like most states (haha not Illinois) New Mexico began issuing Real IDs...as an option. Meaning you could still just apply using the normal NM DMV process.
In fact you said below yours is issued Jan 6 2019. This will not end up mattering because the 2020 deadline just means that TSA guys will not let you board with a Non Real ID document or ID. In 2021 you could still get a New Mexico drivers license without the start ( Driver Authorization Card) and it would be legit.

Short Answer: If the bouncer knows what he/she is doing, or know how to read the Barbook, no, a lack of Real ID star will not raise red flags. Do the vendors know about this? Given that most people just include the Star in their temps these days I think it's safe to say yes lol.

You are correct. However, the problem is if the bouncer knows when the state switched to REAL ID.

eg. CA switched to REAL ID on 1/20/18. Therefore, any ID with an issue date on or after 1/20/18 should either have a gold bear or say NOT FOR FEDERAL USE. And if the ID doesn't have either, that's a dead giveaway that it's fake

This is also state by state though, for New Mexico I don't think there is a version of the temp with "Not for Fed" because they are going to release a whole new modified temp for what they call a "Driver Authorization Card" which will have "Not for Fed" in the spot where the "New Mexico" Header is on the current ID, so based off this guys issue date, it shouldn't be a red flag.

In AZ I don't think so, I know many state are doing that, but some are only going to create a new "temp" once they begin issuing Real IDs, see Illinois for example, they currently don't issue IDs with a "Not for Federal use" disclaimer, and I believe AZ is the same way

Real ID doesn't concern the physical ID itself. It's about the issuing process.

Real ID means your social security number and citizenship status were verified. The only difference on the ID itself is the star.

IDs issued past the Real ID date but where the applicant didn't submit the citizenship documentation would get text that says "not for federal identification" printed on the ID instead of the star. That's the only difference. Now, if your ID issue date is after the Real ID act went into effect in that state, and it doesn't have either the star or the "not federal ID" text, then that's a red flag.
